Will the Medusa 5.1 ProGamer Edition V2 Headset work with the HT Omega Striker 7.1 Channels 24-Bit 96KHz PCI Interface Sound Card, or possibly this one??

I bought this card a while ago. Recently I just bought a new receiver with all new speakers and setup everything to 7.1. After plugging the optical output from this card to the receiver, I was only able to get 2.1 output from it.  Made me so angry because I spent so much money on my sound system and can't get much out of it ...
