There's plenty of revs out there to get an idea of what your cpu will do on that board, http://www.bit-tech.net/hardware/motherboards/2009/03/16/gigabyte-ga-ex58-ud3r/9, assuming you're using an 920. Realize all chips have their own cpacities, so what works for one may not for the next. It will certainly help if you have a D0 step as opposed to a C0, but I've run and seen some C0s go higher, save for higher temps. Overall though the D0s rule the earlier step.
If you want to OC for some screen shot braggin rights, cool, but if you're looking for performance gain, up to 24/7, don't worry about the memory speed too much, all the current revs show there isn't much performance gain on ram speeds over 1333, as opposed to 1600-2000 (haven't really seen to many >2000 so reserve that one.) The CPU is certainly the best focus for PG.
The good thing is the UD gigabyte boards provide added cooling with the added Cu layer. Watch your Vregs though, it'll spike easy on most boards, which is why I ended up saggin down a Classified for myself (b/i Vreg control.)
Lastly, OC incrementally, take her up slow, and you'll inevitably get a good idea of what your chip can do.
