I noticed that the asus P5E "sortof" comes with onboard audio. It looks like what they do is include it in the form of a PCIe x1 card.

This seems true for every version of the mobo other than the "professional" version, which for some strange reason has a PCI-X slot.
Now, the two PCIEx1 slots are nestled between the x16 slots, so if the board were to have xfired 4870s, one would be directly covered by the top card's cooling area, and the other would be nestled between that and the second 4870. Would that cause any problems? I'm trying to picture the mobo with the size of the cards, and I don't think it will be in the way of the 4870 fan, but I don't know if that space needs to be empty for ideal cooling.
I don't have speakers capable of S/PDIF so if its going to cause a problem I'll need to look into some alternatives, either a PCI soundcard, different mobo, or whatever.
