They have centrifugal fans so it's not really an issue. The less air that enters the fan blades, the more vacuum the fan makes and so it will just pull more air from what little crevices it can get it from. Unlike water, air is very easy to push/pull anywhere so even if you did mostly block off the fan, it would still push the same amount of air, but would just be pulling it faster through the gaps that it does have.. The fan is temp controlled, so even if it got warmer air, it just speeds the fan up to keep the card at the same temps.
Rest assured, these cards are designed for Crossfire / SLI no matter how big they are
Go ahead and put those cards right next to each other if you want.
As long as you have fans with shrouds on them that vent outside of the case, you can put them as close together as you want... It's only when you have graphics cards without shrouds that you might want to space them out..
